Pancakes!







Pancakes, placuszki śniadaniowe albo penkejki :D  to ulubione weekendowe śniadanie mojej rodzinki. Z borówkami, malinami, brzoskwiniami, polane syropem klonowym, syropem z agawy lub miodem, posmarowane nutellą lub masłem smakowym placuszki są po prostu BOSKIE. Wersja de luxe (czytaj: sto tysięcy kalorii) to ta z masłem, plastrami chrupiącego boczku i dużym chlustem syropu klonowego. Na nią odważamy się rzadko:D Od kilku lat stosuje sprawdzony przepis Nigelli z książki Nigella gryzie, zmieniłam tylko kilka detali w przygotowaniu, żeby były bardziej puszyste:) Rodzina i ja nigdy nie mamy ich dość, spróbujcie koniecznie!

225 g mąki
20 g  = 2 Ł masła (roztopionego i ostudzonego)
1-2 łyżeczki cukru
2 czubate łyżeczki proszku do pieczenia
300 ml mleka
2 jajka
szczypta soli

W średniej wielkości misce mieszamy suche składniki - mąkę, proszek do pieczenia, cukier i sól. W osobnej miseczce trzepaczką rozkłócamy jajka - warto robić to przez chwilę, aby placuszki były puszyste. Do jajek dodajemy stopione masło i mleko, mieszamy. Wlewamy mokre składniki do suchych i mieszamy trzepaczką do uzyskania gładkiej masy (powinna mieć konsystencję gęstego ciasta na racuchy). Odstawiamy masę na 10-15 min., aby proszek do pieczenia zaczął pracować. Kiedy na powierzchni masy pojawią się pęcherzyki powietrza, można smażyć. Patelnię rozgrzejcie mocno, a na samo smażenie zmniejszcie płomień. Ja smażę penkejki na odrobinie masła, ale śmiało można je usmażyć na oleju. Odsączam tylko jeśli smażę na oleju:)

Boczek (w wersji dla smakoszy) - cienkie plastry wędzonego boczku ułożyć na kratce w brytfance do pieczenia mięsa. Piec w temperaturze 180 stopni ok 10 minut. Po upieczeniu lepiej odsączyć boczek na ręczniku papierowym. Ułożyć na placuszku i skropić syropem klonowym. Niebo!



Pancakes or "penkejki" as we like to call them are my family's favourite weekend breakfast fare. With blueberries, raspberries, peaches, drowned in maple syrup,  agave syrup or honey, topped with nutella or sweet-flavoured butter they are simply DELICIOUS! The de luxe version (read: calories galore) comes with butter, strips of crispy bacon and a genearous splash of maple syrup. We try not to have it too often:D I have been using Nigella's recipe from her book Nigella bites for years now, only changing the preparation a bit to make the pancakes more fluffy. My family and I can never get enough of these lovelies so be sure to try this recipe!

225 g flour
20 g (2 T) unsalted butter (melted and cooled)
1-2 t sugar
2 heaped t baking powder
300 ml milk
2 eggs 
pinch of salt

In a medium sized bowl mix all the dry ingredients - the flour, baking powder, sugar and salt. Crack the eggs into another, smaller bowl and beat them lightly - it will give the pancakes more fluff. Add melted butter, mil and stirr. Add the wet ingredients to the dry ones and whisk together until the batter is smooth (it should be quite thick). Set aside for 10-15 minutes until air bubbles start to come up - that means the baking powder is working its magic - and you're set. Make sure the pan is very hot but reduce the heat before you spoon in the pancakes. I use butter for frying but it's okay to use vegetable oil too. I drain the pancakes only if they're fried in oil. 

Crispy bacon (for connoisseurs) - place the bacon strips on a metal rack in a roasting pan and cook at 180 degrees C for approx. 10 minutes. Drain on a paper towel to get the excess fat out. Place the bacon strips on the pancakes and top with maple syrup. Heaven!
